The late Diana Kennedy was an inspiration and inspired by all foods Mexican. This book is amazing with some delightful recipes that you just won't see in any standard restaurant.
Greece
I have never been to Greece but I do love the food when cooked by my Greek friends. They say it's traditional. I plan to go and sample it for real one day. I am also a huge history buff. It's a great part of the world for such things.
This book I was put onto by my friend, Niki. It's a great book with some wonderful recipes.
Heritage by Sean Brock
Sean Brock is one helluva chef. He owns several restaurants in the Carolinas and other southern states. He hails from Virginia and first came to my attention when i visited Husk in Nashville, TN. I had a shrimp and grits that was out of this world. The balance of flavors and spices were amazing. He also appeared on the Netflix show Chef's Table and it talks of his struggles as well as his genius. He earned a lot of respect from me putting his story out there like that. You should check it out.
This week (Oct 23, 2023) I made dishes that inspired from his book Heritage. It's a homage to all things that mean something to him.
This week's chef focus is Marcus Samuelsson. He is of Ethiopian-Swedish decent and it comes out in all his cooking.
He is remarkably inspirational and owns many restaurants worldwide, including the acclaimed Red Rooster in Harlem, NY.
The recipes for the week of October 16th 2023 come from his book Rise which was his dedication to all black chefs. The man is fiercely proud of his heritage and he shows it beautifully.

The theme of the week October 9th 2023 is Michael White. Micheal is arguably one of the best chefs in the art of Italian cuisine. He makes everything from scratch and makes it look so simple. The dining experience was remarkable.
This book Classico E Moderno is split into Classical and Modern cooking styles and dishes and is a must for anyone who enjoys food from the big boot.

This week, the week of September 25th 2023, the chef focus is Argentine chef, Francis Mallman. I love this guy's work. He lives on an island in Patagonia and cooks simply but very creatively. I refer to the two books shown here often. Mallman on Fire and Green Fire are both a great endorsement of his work.



Appetites and The Les Halles Cookbook were the focus of the week of September 11th 2023 dinners.
Les Halles is where Anthony was working as the Executive Chef when he wrote Kitchen Confidential. There are some fine dishes from the classic French bistro.
Appetites is a more down-to-earth cookbook where Bourdain not only shares his passion for food and different cultural tidbits but it also shows off his amazing writing prowess.
Both books are available at most good book store for around $40.
